How to delete email addresses from gmail

There is no way to set the default email address for a contact as far as I can tell. Does anyone know how to get Gmail to delete the old email address and use the new one? Not being able to correct email addresses is bad enough personally but it is friggin' brutal for organizations. Thank you.
